Easy Meal Prep: Brazilian Pork Chops

As I have said before, sometimes 30 minutes for a Rachael Ray meal is too much time for me. Therefore, last night was another Easy Meal Prep night, using a meal from EZ Dinners. We had Brazilian Pork Chops, which were made with a garlic and lime marinade. As side dishes, I served buttered whole wheat egg noodles, a Caesar salad, and the veggies that came with the entree from EZ Dinners. I just sauteed the veggies in the same pan I cooked the chops in, but with some olive oil, salt and pepper. For the pork chops, you just take them out of the ziploc bag they were frozen in (and sat marinating in after defrosting) and saute them for about 5 minutes on each side in a bit of oil.

As with many easy meal prep meals, this one exceeded my expectations. I don't know about you, but when I pull something out of the freezer, I immediately think it can't be that great. But, mixed with fresh ingredients, and due to the excellent recipes from the easy meal prep places, it actually turns out amazingly well. I like to think that they use recipes that will turn out well even after being frozen.
