Easy Meal Prep Dinner: Thai Chicken

These meals come in handy when even 30 minutes worth of cooking is too much. Last night's meal was from EZ Dinners, one of my favorite local Easy Meal Prep places. It was Thai Chicken with peppers and onions. The other veggies were given as a side dish and the brown rice was my own (and it was Minute Rice! Gasp!).

The only preparation required was dumping the chicken and sauce into a skillet with a little EVOO and then adding the peppers and onions once the chicken was almost cooked. After I took the chicky out, I sauteed the other veggies with a little soy sauce and sesame oil. Turned out pretty well, if I say so myself. Start to finish, the whole meal took about 20 minutes to make (not counting the time I spent at EZ Dinners assembling it, of course).
