Another Great Review of Express Lane Meals

Gail Ciampa, the food editor for the Providence Journal, recently reviewed Express Lane Meals and found it worthy. It seems like the media is finally starting to understand that Rachael does not pretend to be a fancy chef, but instead tries to help all of us who don't have the time to cook big fancy meals (or in my case, don't really have the cooking skills to do so). The author of the review has a very playful and fun approach to the concept of Express Lane Meals and provides several recipes, including the Drunken Tuscan Pasta, which Rachael made during her appearance on Live with Regis and Kelly. I just have issues dumping a whole bottle of scrumptious red wine into a pot and boiling pasta in it, so I have not tried that recipe yet. Here's my favorite quote from the review:

The back flap of the book jacket offers an aisle-by-aisle checklist of what we need to keep on hand. Is tamari handy at your house? If not, it's time to go shopping. And you'll need those cannellini beans, bacon and eggs and beef stock in a box. Don't forget the canned Alaskan salmon, anchovy fillets and chipotle chiles.
