Rachael Ray's Pesto Torta
My Garlic Guacamole (just double the amount of garlic in any guac recipe and you pretty much have it)
Rachael Ray's Korean Flank Steak
Rachael Ray's Honey Teriyaki Chicken
Side dishes contributed by my friends including a fruit salad (in a sauce with champagne and egg whites), a green salad with gorgonzola and walnuts with balsamic dressing, a pasta salad, and Wisconsin Style potatoes (baked with lots of cheese!)
Overall, everyone seemed to really enjoy the meal. I heard the most compliments for the chicken and I will use the method in that recipe from here on out whenever I make chicken. You cook one side, apply the baste, then when it is done, you flip it and cook for two more minutes. That way the sugary sauce does not get all black and crusty. It truly exceeded my expectations. And all the side dishes contributed by my friends were simply outstanding! I am now inspired to throw a Memorial Day BBQ every year. Oh, and the Etch It Cups were a big hit!
The picture is from the Food Network website. By the time I thought of taking a picture, most of the food was gone!
Sounds like a great way to kick off the summer!
ReplyDeleteI have to say that the chicken was out of this world. I think we have a definite tradition in the works here!
ReplyDeleteEtch cups rock.
ReplyDeleteNice work on the main dishes.
