Memorial Day Menu Was A Success!

We had about 15 people over for Memorial Day yesterday and I was a bit nervous. This was the first time I prepared a meal for that many people. However, the BBQ somewhat morphed into a Potluck as I figured out that my desire to do it all myself was being undermined by the time actually available to me to get it all ready. So, as my friends RSVPd and offered to bring side dishes, I happily accepted. So the menu ending up consisting of the following:

Rachael Ray's Pesto Torta
My Garlic Guacamole (just double the amount of garlic in any guac recipe and you pretty much have it)
Rachael Ray's Korean Flank Steak
Rachael Ray's Honey Teriyaki Chicken
Side dishes contributed by my friends including a fruit salad (in a sauce with champagne and egg whites), a green salad with gorgonzola and walnuts with balsamic dressing, a pasta salad, and Wisconsin Style potatoes (baked with lots of cheese!)

Overall, everyone seemed to really enjoy the meal. I heard the most compliments for the chicken and I will use the method in that recipe from here on out whenever I make chicken. You cook one side, apply the baste, then when it is done, you flip it and cook for two more minutes. That way the sugary sauce does not get all black and crusty. It truly exceeded my expectations. And all the side dishes contributed by my friends were simply outstanding! I am now inspired to throw a Memorial Day BBQ every year. Oh, and the Etch It Cups were a big hit!
