Rachael Ray's Summer Meals Featured on the Insider

I was hunting around for recipes for dinner tonight that don't involve any generation of heat in the house and stumbled across this Insider piece about summer meal suggestions from Rachael Ray. She recommends stir-fry, grilled foods, salads and shakes. I think stir-fry is a great idea - only heats up the kitchen for a few minutes if you do it right and has minimal clean up, too.

The piece highlighted a couple recent menus from 30-Minute Meals. The first was this Summer Cooldown menu of Sliced Grilled Portabella Mushroom Sorta-Caesar Salads with Tipsy Triple-Chocolate Shakes and Strawberries. Next is the menu ET called her "Summer Stunner" and the Food Network calls her Summer Soiree menu. Whatever name you call it, it sounds good, with Grilled Veal Chops with Raw Sauce and Grilled Potato Salad.

Now, if I can convince my husband to stand outside in front of the grill in the 106 degree weather, I am golden.

  1. Another great summer meal is her Turkey Club Salad - we saw it on TV last week and used leftover turkey that was smoked in a Green Egg. I didn't have much luck with the Avacodo Dressing - it seemed the more EVOO I added - the thicker it got. Ended up more like guac. Woops!

  2. Thanks for the tip J.B. I will try that one out. Her chicken club from Get Real Meals is great, too. Guac on salad couldn't have been that bad!

  4. Cate - nothing on this list. After looking at these recipes, I saw the burger of the month from the most recent issue of Every Day with Rachael Ray and was inspired. The post on that will be up tomorrow!
