
If you are looking for something a bit more low key, try one of my Brunch Favorites listed below. I only included my absolute favorite Rachael Ray breakfast recipes, so these are sure fire if you ask me. When I was a kid, my parents used to have a mimosa on Christmas morning and I have taken up the tradition in my family. A mimosa (champagne and orange juice) would go perfectly with any of these brunch menus.
Christmas Brunch Menu from Every Day with Rachael Ray:
- Berries with Maple Cream (requires beating cream to make peaks, which I've never done before. Maybe a learning experience for me?)
- Apple-Potato Gratin (looks much easier than it sounds)
- Mini Turkey and Egg Casseroles (a perfect use for that leftover turkey from Christmas dinner and if you do a ham, I bet it would work out well, too)
- Swedish Coffee Bread (looks scary, requires measuring)
- Spiked Apple Cider (previously featured in the Cocktails post of this series)
- Canadian Benny's (you could subsitute leftover ham for the canadian bacon, but try really hard to find Canadian cheddar!)
- Apple-Maple Chicken Sausage Breakfast Sammies (this is an all time favorite for us. I reviewed it in the early days of Everything Rachael Ray, before I started taking pictures of my recipes and before I figured out what the h*ll I was doing with this blog)
- Bacon and Cheese Frittata (please do a better job than me making this one)
- Green Ranch Hand Eggs
- Chili Sweet Potato Hash with Fried Eggs and Fresh Tomato Salsa (another early review, sans photo, of course)
- Cowboy Hash and Eggs, Texas Toast and Salsa
Great. Now I'm starving. Darn you, Breakfast!
There are so many good recipes there that I want to try. Ever since I saw that 30mm episode with her making the Apple-maple sausage, I have wanted to try that. I'm just too lazy and buy ready-made sausage. LOL!

Jennifer - the ready made sausage is a bit high maintenance, but the rest of the recipe is so easy. And making the sausage is what makes the dish!
ReplyDeleteUncle Stephen - yes! Whole Food is exactly where I found the Canadian Cheddar. It was sooo worth the drive to get it.
Breakfast is also my favorite meal! I've been wanting to try those Canadian Benny's, but on Christmas morning I want to be able to relax and not be slaving away over the stove. Guess it'll have to wait until after the holidays.

ReplyDeleteMadeline - Oops! I thought you had to poach the eggs for this recipe (which I love doing, but I'm afraid to do more than one at a time). I'll have to talk to my husband about making this Christmas morning...his mom is coming over and she's a picky eater. :)

ReplyDeleteMadeline - poached eggs are actually really easy to make...all you need is a pot of barely boiling water, some vinegar and a slotted spoon. I only like doing one or two at a time, though, because you have to cook them for exactly 4 minutes or else the yolks start to get hard.
ReplyDeleteI talked to the husband and we're doing the Canadian Benny's on Christmas morning! I'm very excited. As always, though, I'm going to tweak the recipe a smidge and use English muffins instead of bread for the base.
It's the "exactly" four minutes part that scares me, but I am sure I will get around to trying it someday. Thanks for the tips.

ReplyDeleteAs for the sausage, I'm so lazy I probably will never try to make it...but man it sounds so delicious.
Seriously, the sausage is sooo easy. You just mix the ingredients up in a bowl. Although, I hate touching ground chicken, so that part sucks.
