Mother's Day by Rachael Ray

With Mother's Day fast approaching, I thought I would share a few Mother's Day recipe options from Rachael Ray.

In Rachael's magazine, Every Day with Rachael Ray, you'll find many options, including Creamy, Fruity Stuffed French Toast Hearts, Room Service Stacked Eggs, Fluffy Florentine Frittata, French Twist, and Corn Cakes with Apples and Sausage. I'd say it's geared more towards a cook with at least an intermediate skill level.

If that isn't enough to inspire you (or if you are looking for something a little bit easier), check out some of Rachael's menus from her Food Network show, 30-Minute Meals. The Breakfast Makeover menu includes some very easy and tasty items including Black Pepper and Asiago Scones, Salami Scrambles, and Pink Sunrise Cocktails.

Rachael sent her mom a special message in the May issue of Every Day with Rachael Ray, just for Mother's Day that should inspire all of us:

All moms seem to share frustration when it comes to giving advice – they think their kids don’t listen. How is it, then, that all of us ‘kids’ grow up and hear our mother’s advice falling from our lips?

Mom and I have become so alike that when we do clash it’s about just that. I do as she does, but not always as she says. Elsa [Rachael’s mom] would give her last 10 bucks to help out not only her own child but a worthy stranger in need, and if she spent it on herself, it’d be for flowers or half a tank of gas to go on an adventure.

Mom, when you tell me to be more practical and to plan for ‘someday when…,’ I hear you. But I prefer trying to be like you – adventurous, generous, and gobbling up every moment of my life here, in the present.
