Sunday: I'm trying a roll-over meal from the Yum-o! The Family Cookbook - for the first night it is Turkey Stuffin' Meatloaf with Scallion Mashed Potatoes, then I'll use the lefover meatloaf the next night for....
Monday: Enchil-lasagna and green salad
Tuesday: Jalapeno Popper Mac and Cheese from Rachael's SXSW recipes, published in Everyday With Rachael Ray
Wednesday: Pork Chops with Honey Mustard Gravy and Apple Slaw from Everyday With Rachael Ray
Thursday: Curry Chicken (from Fix, Freeze, Feast) and brown rice
Friday: Takeout!

ReplyDeleteI noticed from this week and last that you have several meals from "Fix, Freeze, Feast". I checked it out on Amazon and the reviews seem good. If I had to buy just one freezer cooking book, would you recommend this one?

ReplyDeleteYes, I highly recommend it. It is the second one I have tried and definitely the best of all the ones I have seen. It does not use tons of processed ingredients and is very practical. It seems like lots of these cookbooks rely on canned soups and stuff, which I am not a fan of. If you shop at a warehouse store, it is even easier, since the recipes are based on the trays of meat from those stores.
I have liked most of the recipes I have made and they are quick and easy! It's basically making marinaded meats and freezing them, then I have to come up with the sides on the evening I make the dish. Much cheaper than going to the easy meal prep stores like I used to!

ReplyDeleteI purchased the book based upon the positive comments I had read here, and I agree it is a good book to have, use and enjoy. The mustard oregano pork chops are really good, and the same marinade is great on chicken thighs.
ReplyDeleteI'm glad to hear that, Melynda! This weekend I need to make more frozen meals, so I'll try those pork chops. I loved the Pecan Crusted Chicken and the Chicken Cordon Bleu. The only ones I haven't loved so far are the Cherry Skillet Chicken (I think the recipe didn't work as well when halved becuase there wasn't really any sauce) and the Mariachi Chicken Rolls (just not really to my taste, but my daughter and husband like them).
