Got some great news this week - I don't have gestational diabetes during this pregnancy!  This is great news because it means that I don't have to be on a carb restricted diet and can eat whatever RR recipes I want, unlike my last pregnancy.  So excited.

Okay, I am more into modern/clean lines than cutesty stuff, so these new veggie totes, which you can purchase from Rachael Ray's online store, aren't really my deal. However, there is no doubt that they are entitled to creativity points!


The store also now has these cute lunch totes, but I'm not sure if anything about them screams "Rachael Ray" to me. Thoughts?

The Don't Kiss Me Garlic Burgers from Every Day with Rachael Ray are just so crazy good that words cannot describe it.  Now, to be fair, these burgers incorporate two of my all time favorite flavors - brie cheese and garlic.  How could those be so good ona  burger?  I don't know, but dear Lord, they are outstanding. 

This recipe was written by the winner of Rach's Burger Bash and she so completely deserved it.  I wish Rachael would have her write more recipes!  They aren't kidding about the Don't Kiss Me part, either.  Between the stinky cheese and the stinky garlic pesto, this recipe will sort of knock someone else over if they get to close to you.  Just make sure everyone in the house eats it and you'll be fine. 

Here's the recipe with my comment in brackets: 

Ingredients:


4 cloves garlic
1/3 cup fresh basil leaves
2 tablespoons pine nuts [these little guys aren't cheap, so make sure you check the bulk bins to see if you can just buy this amount.]
3/4 cup plus 1 tablespoon extra-virgin olive oil
1 onion, thinly sliced
1 pound ground beef chuck [I think this means the 80 percent lean ground beef]
3/4 teaspoon crushed red pepper
Salt
1/2 bound brie cheese, sliced [buy some triscuits or a baguette so the rest of it won't go to waste!]
4 Kaiser rolls, split

Directions:

1.Using a food processor, chop the garlic. Add the basil and pine nuts and, with the machine on, pour in 1/2 cup olive oil and process until almost smooth.

2.In a medium skillet, heat 1/4 cup olive oil over medium heat. Add the onion and cook, stirring occasionally, until softened and browned, 15 minutes.
3.Meanwhile, preheat a grill or grill pan to high. In a medium bowl, combine the beef, crushed red pepper and 1 teaspoon salt. Shape into 4 patties; brush with the remaining 1 tablespoon olive oil, then grill for 5 minutes. Flip and grill for another 5 minutes; top with the cheese for the last 3 minutes of cooking. Grill the rolls until golden.

4.Spread the pesto on the roll bottoms; top each with a beef patty and some onions and cover with a roll top.

The extent to which I overthink things can get a little ridiculous.  Take menu planning for example.  My new obsession is using up stuff I already have, but I also go a little nuts about the order of recipes each week.  I try to put the easy ones on days I work (a no brainer, right?), but I also always make each week's vegetarian meal last.  I hate the idea of eating meat on Thursday that has been sitting in the fridge since Sunday!  Plus, if I am too wiped out from work that day, I can always make a veggie meal a day later.
