Rachael Ray Roundup
Friday, December 24, 2010
This week's Roundup encompasses a month. Why? Well, that would be because of the little person who is constantly needing attention! Newborns can be so selfish. I kid, I kid! I'm back to cooking at least 5 nights a week, so I'll start posting the kind of posts I started this blog for again - reviews of Rachael Ray's recipes. In the meantime, check out some Rachael Ray posts from around the blogosphere this week. If you see a post that you think would be good for the Roundup, or you write one yourself, e-mail me at everythingrachaelray at gmail dot com. MERRY CHRISTMAS!!!!
- Lindsay of Cookin Lean Like Paula Deen and Friends made Toasted Cornbread, Bacon and Chestnut Stuffing.
- Ali of AliGirl made Penne with Bacon (Pancetta), Butternut Squash, and Spinach from Every Day with Rachael Ray
.
- Cindy of Hun, What's for Dinner? made Paprika Chicken Stew with Potato Pierogies (I'm going to have to make this!).
- Catz in the Kitchen made Sliced Chicken with Apples and Pears.
- Deborah of Taste and Tell made Sausage, Potato and Cheese Waffles. She also made Muffuletta-Style Grilled Ham-and-Cheese Sandwiches.
- Danielle of Let's Dish made Swiss and Bacon Dip.
- Ellie of The Bitchin' Kitchen adapted Rachael Ray's recipe for Lentil Potato Salad to make Potato Chickpea Salad.
- Celeste of Sugar and Spice wrote about meeting Rachael Ray.

My Rachael Ray Christmas Menu
Wednesday, December 22, 2010
Another year, another Rachael Ray Christmas in our house. I know people don't believe me when I say I only make Rachael's recipes, but it's true - with one exception. For Christmas, I always make a great ham recipe from The Food Network Kitchens. It's Roasted Fresh Ham with Cider Glaze and involves brining, which I think is essential. This year, it's going to be a Smalliday (I didn't come up with that phrase, I stole it from Get Togethers). We're only going to have 4 of us eating dinner, so my menu is a little more mellow than usual:
Buffalo Chicken Dip (odd, but my brother in law loves hot wings, so I think he'll love this, too)
Roasted Fresh Ham with Cider Glaze
Bacon Fried Green Beans
Roasted Garlic Mashed Potatoes
Sourdough Rolls
Sticky Toffee Pudding

Menu Plan Monday
Monday, December 20, 2010
With Christmas on Saturday, this week's menu is quick, easy, and cheap. I have stuff for two recipes I didn't make last week, so those are rolling over to the beginning of this week (this is why I save my vegetarian meals for the end of the week - so that meat doesn't go bad if I don't make the recipe!). Check out more menus at Org Junkie.Monday: Roasted Broccoli Rabe and Roasted Garlic Rigatoni and bread
Tuesday: Zucchini Stoup with Herb Breadcrumbs
Wednesday: Special Fried Rice
Thursday: Chicken Peanut Soup
Friday: Pizza
Saturday: Merry Christmas! More on this menu later!
Sunday: Leftovers

Menu Plan Monday
Monday, December 13, 2010
I hear that food prices are on the rise, which is not good news. My menu planning is geared around my budget and I do find that if I simply pick recipes with less ingredients, it really helps to keep my costs down. Simple, but true! I am also trying harder to stock up on meat when it's on sale. What do you to do stick to your budget? Here's my menu plan this week and you can check out more menus at Org Junkie.
Monday: Stuffing Seasoned Chicken Cutlets with Pear Sauce and green vegetable (whatever's on sale!)
Tuesday: Mu Shu Chicken Patties with Seared Napa Cabbage and brown rice
Wednesday: Pork Chops with Peppers and Onions and cous cous
Thursday: Chicken Sausages with Cabbage-Apple Slaw and corn breaad
Friday: Takeout
Saturday: Roasted Broccoli Rabe and Roasted Garlic Rigatoni and bread

This week my menu planning took place in the car while running errands. Don't worry, my husband was driving. ;) And can I say how cool it is that Rachael put so many of her recipes online? Almost all of these are from her new cookbook, yet they are also all online. Check out more menus at Org Junkie.
